A sea urchin bowl
Japan is an island country blessed with the riches of its many rivers and the sea that surrounds it on all sides.
Fish and seafood have been key parts of the Japanese diet since ancient times.
A rich variety of fish and seafood is available all year round.
There are also various different ways to cook fish.
Early summer is the sason for lightly roasted bonito.
But I enjoyed to eat a sea urchin bowl last week in Hokkaido.
